BAKED CHICKEN TENDERS + HOMEMADE CHOCOLATE COVERED STRAWBERRIES

Who ever said being single on St. Valentine's Day had to suck? Besides the fact that it fell on a Monday and Mondays usually have the "suck" effect, it wasn't a half-bad day. You know why? Because there is nothing good friends cannot cure. After a long Monday for everyone, we planned an impromptu Gal-entine's Day dinner that turned out fab

Who doesn't love chicken tenders (vegetarians, you hush your mouths)? These super simple and healthier-than-frying baked chicken tenders are packed with flavor.

Step 1. Preheat oven to 375 degrees.

Step 2. Purchase chicken tenders.

I make the extra special requests for Sanderson Farms because it is in my parents' hometown of Laurel, Mississippi, and it is of course, delicious (and available at your local grocer).



Step 3. Get your plates ready.

Plate 1. eggs + milk
Plate 2. flour + seasoning (Tony Chachere's Creole Seasoning is my personal favorite).
Plate 3. bread crumbs. Here, use anything! Tonight, we went with simple Italian bread crumbs, but don't by shy about crunching up some Cool Ranch Doritos and throwing them in the mix as well. Creativity amongst your flavor palette can produce wonderful surprises.




Step 4. Get your fingers dirty.

Roll chicken in flour.
Roll chicken in egg + milk.
Roll chicken in bread crumbs.
Place on cookie sheet.

Step 5. Bake for 15(ish) minutes, or until golden brown and cooked thoroughly. And there you have it, a WINNER, WINNER CHICKEN DINNER!




Step 6. Set the table.

Step 7. Chocolate Covered Strawberries

You didn't think I'd leave out dessert, did you? What would Valentine's Day (or V-Card Day as Katherine calls it) be without this special treat? And it's uber simple. We literally melted semi-sweet Baker's chocolate in the microwave, dipped, refridgerated and voila!

NEVER buy this tasty treat, too fun and easy to make!

Ingredients


  • 1.25 pounds (600 kg) boneless, skinless chicken tenders

  • 3/4 cup flour

  • 1 tsp seasoning (Tony Chachere's Creole)

  • 1/4 cup milk

  • 2 eggs, beaten

  • 1 cup bread crumbs

  5. In plate one, add seasoned flour. I simply sprinkled in Tony Chachere's Creole Seasoning.

  6. In plate two, two eggs and milk together.
